Beans for Home/Small Batch Roasting: These green, raw, unroasted beans must be roasted prior to brewing coffee. Do not grind before roasting. The recommended roast profile is medium (also known as city or regular) to highlight the delicate nuances of the beans.

From Our Most Recent Harvest: Premium Arabica unroasted green beans from the best micro-lots at our fourth-generation family farm. The variety pack includes two pounds each of our Caturra and Parainema varietals.

Caturra: A natural mutation of Bourbon and the benchmark Central American coffee. Known for its rich sweetness and gentle profile, it offers well-balanced, smooth coffee with distinctive citrus acidity and pleasant cacao notes.

Parainema: A large bean with a unique cup profile that is bright, balanced, and smooth, featuring unmistakable tropical fruit notes, caramel, and vanilla. It has a medium body with a creamy mouthfeel that lingers.

Specialty Green Coffee Beans: These beans have 5 or fewer defects and no primary defects per 300 grams, with moisture content between 11-12%.

Strictly High Grown Under Shade: Grown at 4,000 FASL, harvested by hand, European prepared, fully washed, and naturally dried.

Sustainably Produced: Our beans are produced sustainably with the highest standards for our fellow Nicaraguans and natural resources.

Product Description: Direct From Our Farm To You: Strictly high-grown under shade. In May, the farm smells sweet with the flowering of the coffee plants. Beneath each bloom is a tiny coffee fruit, or cherry. Protected by a canopy of shade, the coffee cherries develop slowly over eight months, enhancing their flavor.

Hand-Picked At Peak Of Ripeness: Each cherry is hand-picked at the peak of ripeness. The cherries are wet milled daily with natural spring water to remove the skin and pulp. The remaining seeds, or beans, are then fermented for 36 hours before being fully washed.

Fully Washed, Naturally Dried: The washed beans are naturally dried to a moisture content between 11-13% and prepared to a defect specification of 5 or fewer and no primary defects per 300 grams. The dried green beans are exported directly to our Texas facility where they are maintained in a temperature-controlled environment in hermetic bags designed to maintain freshness.
